Egg and Veggie Scramble with Toast


Ingredients:

1 whole egg,

4 egg whites

1 tsp olive oil

½ cup diced bell pepper

1 cup spinach

1 cup mushrooms

¼ cup onion

¼ cup reduced fat cheddar

1 slice whole wheat bread


Sauté vegetables in oil, add cooked eggs, fold in cheese. Toast the bread.
